Kitchen Notes ~ Mother's Shaoxing Drunk Chicken

My most favorite food is mother's Shaoxing Drunk Chicken , so today I will share the cooking method .

The materials needed:
1. A bottle of Shaoxing wine.
2. Two chicken legs or a half chicken (Do not cut into small pieces ) .
3. Som of medlar
4. Red jujube 7~8 pieces .
5. Chuan xiong 2~3 tablets .
6. Chinese angelica 2~3 tablets (will be bitter if to put too much).
7. Salt.



The cooking method
1. Put chicken on the pot, add cold water, remember ,the water must to be swamp over the chicken.
2. Has been cooked to boiling, then adjusted to moderate fire
then cover and cook for 15 minutes in  boring .
3. After that, turn off the fire, do not open lid, then boring 10 minutes.
 
4. Use another pot poured into third of Shaoxing wine, then addwd to the medlar, Red jujube, Chuan xiong ,Chinese angelica. use low heat, cook the flavor out of ingredients.(do not use strong fire because the alcohol will evaporate )
5. Drained the water of pot, take the chicken out to be cooled, then smeared many of salt on chicken, then put the chicken into, the which pot have traditional Chinese medicine and wine.
6. All the remaining wine into the pot, swamp over the chicken
7. Put it in the refrigerator, to marinades at least 2 days, it’s will be delicious .
